Thanksgiving Leftovers? Build Your Own Protein Bowl
Looking for something to do with Thanksgiving turkey leftovers or to experience the warm and comforting taste of the holidays? Try a festive and delicious Thanksgiving protein bowl. Not only is this recipe flexible and creative, it’s protein-packed! Use what you have leftover from Thanksgiving or try the recommended recipes below to fill your bowl with a delicious array of the healthier version of holiday comfort foods.
Mashed Potatoes
- WHAT YOU’LL NEED: 5 medium potatoes, 2 tbsp. butter, ⅔ cup milk
- Bring a large pot of water to a boil
- Wash, peel and chop potatoes into quarters
- Boil potatoes for 15 minutes
- Once soft, strain potatoes and return them to the pot
- Add milk and butter to the pot
- Mash together until potatoes appear to be smooth
Roasted Veggies
- WHAT YOU’LL NEED: 2 cups brussel sprouts, 1 cup chopped carrots, 1 medium sweet potato, 2 crowns broccoli, 2 tbsp. olive oil, 1 tsp. salt, 1 tsp. pepper, 1 tsp. rosemary
- Set the oven to 350 degrees
- Chop brussel sprouts, carrots, broccoli, sweet potato or other veggies into half inch pieces
- Spread the vegetables evenly onto a cookie sheet
- Pour your choice of cooking oil over top of the veggies
- Sprinkle salt, pepper and rosemary over top of the entire tray
- Roast in the oven for about 20 minutes or until vegetables reach desired consistency
Healthy Gravy
- WHAT YOU’LL NEED: 3 cups vegetable broth, ¼ tsp. sage, thyme, rosemary, pepper and garlic powder, 4 tbsp. whole wheat flour, 1 tsp. cornstarch
- In a large pot combine the flour, cornstarch and vegetable broth
- Add all other ingredients, stirring well to combine
- Continue to stir thoroughly as you bring the gravy to a boil
- Reduce the heat to a low boil
- Boil the liquid down until it’s half gone as you continue to stir
- Remove from heat and allow to cool slightly
Protein bowl:
Using mashed potatoes as the base of your bowl, add stuffing, roasted veggies, leftover turkey and any other leftover foods you have available. Pour gravy as desired and dig in!
